PD Dr. habil. Helene Loos has been assigned the deputy professorship of food science at IEL since October. After studying food technology at the University of Hohenheim, Helene Loos specialized in the field of aroma and smell research and completed her doctorate and habilitation in food chemistry. She conducted fundamental and applied research at the Friedrich-AlexanderUniversität Erlangen-Nürnberg, the Fraunhofer Institute for Process Engineering and Packaging, and the Centre des Sciences du Goût et de l'Alimentation. Her current research focuses on the characterization of aroma compounds in food and the elucidation of volatile and odor-active substances that play a role in chemical communication between organisms. The metabolization of aroma compounds in the human body and their excretion, as well as molecular principles of odor perception are also investigated in this context. Helene Loos has extensive expertise in the characterization of volatile and odor-active substances, which is relevant for various questions in the medical and agricultural sciences. Examples include the determination of food quality, the elucidation of semiochemicals in animal-animal, animal-plant or plant-plant communication, as well as the identification of volatile substances associated with diseases or metabolic disorders. Helene Loos will teach the subjects "Technofunctionality of food ingredients", "Process-related food technology" and "Foods".
